Get a Carleton 4" round old work wallcase. This has ears on it with a couple of long sheet metal screws. Change out the screws with longer ones
so the ears will work with the doubled up sheetrock.
What may work too is a fan hanger bracket and box. This is a tube with a screw in the center that screws into a stud and the other end also has a screw for the other stud. The box is fastened with a U shaped strap and nuts into a metal box.
