Cool Low water pressure?

I'm surprised. But since you never actually did clarified the original complaint with the cubes, it is difficult to know what might have been the problem.

new problem: the tray only partially fills with water and makes only 1 or 2 cubes at a time, albeit they are really nice, solid cubes. Does the timer have any adjustment that will cause it to stay in the "fill" mode longer?
Did you replace the water valve as well when you replaced the icemaker?

There should be a fill time adjustment on the side of the icemaker head which can be changed to increase or decrease the fill *slightly*. On some icemaker models that adjustment may be under that mechanism's cover.

However, a more common cause of this 'new' symptom is poor water pressure to the whole fridge... which can also be responsible for a 'hanging up' symptom like you first reported. I would suggest you look into the fridge's water supply before tampering with an 'out of the box' icemaker unless the water valve was changed at the same time as the icemaker.

PS. If it wasn't changed, don't bother changing it now as it will make pinpointing the cause even more difficult.
