Recessed Lighting
I have a new home being built, and have asked for recessed lighting in the kitchen. The builder installed 6 cans in the center over the island but informed me he is unable to install a recessed can over the sink area. He claims that there is a ceiling joist that runs in the center.. therefore the recessed can cannot be installed properly centered over the sink. Is there an alternative installation that I may suggest, and/or if that to be the case do I have other lighting options for this area?

Two small cans on either side of the joist? That is what I would do.
SIX(!) cans over an island??? What is it, the size of Greenland?

doctoring up one joist wouldn't take away from the integrity of the whole joist system - so, cut one joist and put a piece of 2X10 or whatever you are using cross ways between the other two and nail it in place. then fasten another piece of 2X between the joists equal to the width of the can. fasten your hangers into the cross pieces - problem solved.
