Wire runs through joists...

Is it okay to run more than one wire through a hole in a joists? Suppose the hole is 1 1/4" ...permissible to run two wires through it?

yeah but an inch and a quarter hole is kinda big for a joist. I wouldn't go much bigger than an inch or even seven eighths inch. two or three can be drawn through them. any more and the derating rule takes effect.

Floor joists

It's a 7/8" Nail Eater bit. My eyeballing wasn't as good as actually measuring....

yeah, the nailer eater auger is what I use.
