Septic tank/field maintenance?

We just purchased a home (closed in January) and have have the septic tank back up into the house. After 5 hours with a large rented sewer machine I had to call an excavator and have the tank(s)(?) exposed and then pumped.

What other maintenance do I need to do to keep this thing working to full efficiency?

System description "ANTIQUE" 2 125 gallon "Clay" tanks in series with a 25-30 gallon grease trap for gray water into a 4"(?) clay drain/field tile.

Will a water softener or washing machine discharging into the grease trap hurt/affect anything?

What treatment if any, will help? ridex? robec?
