Primarily the odor is a result of food particles caught on the inside of the disposal housing and the cutter wheel. One simple method of cleaning a disposal body is to periodically (about once a week) run a dozen ice cubes through the disposal. You can also sprinkle a little baking soda in the disposal unit and let that sit overnite, the rinse it out in the morning by turning the water on and running the disposal for a few seconds.
The actual cutting surface of the disposal ginding wheel is made with grooves very similar to a common metal workers file. Running the ice cubes through the unit will clean the grooves, which not only reduces odors but has the end effect of sharpening the cutters.
