Post Plumbing pressure problem

New homeowner, and thus far the house has had great water pressure. Yesterday morning I noticed a leak from the connection for the ice maker filter to the cold water pipe. I replaced the connector and leak is gone, but now the water pressure has lessened to the kitchen sink - everywhere else is as it was. I've retraced my steps to the best of my knowledge and can't figure out what would make this happen...any ideas?

put in a new saddle valve. it's possible that there is a mineral build up around the old valve "needle". the needle is a hardened piece of alloy copper that punctures the tubing and forms its own seat when it's screwed in.

Slow water.

Since it's just at the kitchen sink, remove the aerator from the faucet and clean the debris from the screen. Make sure to cover the drain so those parts don't find a new home!
