Wallboard joints

I live in a moble home. I am trying to remove the strips on the walls and paint them. I have done two rooms, however I can still see the seams in the walls. When I removed the strips there were large gaps and small gaps. I used joint compound, sanded and it seemed to be smooth, but once painted I can see the humps. Is this because the boards are not flush, or because I left too much compound on the wall? What is the best way to handle this job. I started in rooms that it really didn't matter as much, but now want to move on to the living room and I am a little scared that they will not look right. Can someone please give me some advice? Thanks
